This approach illustrates the company's commitment to ensuring the well-being of its gastropods, which are raised in parks covered with abundant vegetation, including organic mustard, thus providing a natural and healthy environment for these small animals.

At Casa Lumaca, each snail is washed and de-shelled with the utmost care, then simmered in a fresh vegetable court-bouillon with a touch of white wine.
