After a radical change of life and a move to the enchanting island of Corsica, Catherine decided to embark on a new adventure: becoming a vinegar maker. Always guided by her love of good things and her demand for quality, she set about creating vinegar specialties that will delight the most discerning palates.
At Acetu Balaninu, each vinegar specialty is handcrafted using the traditional Orléans method. The precious oak barrels in which the vinegar is aged for several months play an essential role in the process. Catherine lets nature work its magic, while keeping a close eye on every step of the process.
Constant monitoring of the vinegar's evolution is essential. Catherine takes regular pH readings and frequently tastes to monitor the acetic fermentation and the taste qualities of the vinegar being formed. In this way, the acidity of the vinegar gradually increases to harmonize perfectly with the aromas of the wine.
Once the ideal balance has been reached, the vinegar is filtered to eliminate bacteria and guarantee its stability. It is then carefully bottled, using a semi-automatic bottling machine, before being corked and labelled. Each bottle of Acetu Balaninu represents the fruit of rewarded patience and unique craftsmanship.
